Cheesy Broccoli and Rice Chicken Casserole

The combination of creamy cheddar cheese and broccoli gives this traditional dish a flavor that is hard to resist! Adding shredded chicken transforms it from a delicious side into a hearty, full-flavored meal. Cheesy comfort food at its best!

Ingredients
  • 3 cup water
  • 2 cup whole milk
  • 3 cups Cheddar Broccoli & Rice blend
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • 2 cups shredded cooked chicken
  • 1-16 oz. bag frozen broccoli florets
  • 2 cups shredded sharp cheddar cheese
  • 2 tablespoons butter, melted
  • 2/3 cup buttery style crackers, crushed
Instructions
  1. In a large saucepan, combine rice blend, water and milk, and stir. Carefully bring to a boil, stirring frequently. Bring back to a low simmer for 10 minutes.
  2. Add pepper, garlic powder, paprika, shredded chicken, broccoli florets and half the shredded cheddar, and fold in all ingredients until combined. Spoon into a greased 2½ quart baking dish.
  3. Combine melted butter and cracker crumbs. Sprinkle on top of the casserole. Top with remaining 1 cup shredded cheddar cheese. Bake on the middle to lower rack at 350? for 10 minutes or until bubbly and crumbs are golden brown.
