Irish Style Beef Stew

Beef stew is a simple meal that’s full of complex, meaty flavor. It’s the kind of meal that’s beloved by those meat-and-potato eaters as well as soup lovers. Ingredients
- 2 tbsp olive oil
- 3 lbs boneless chuck roast, cut into 1 1/2-inch pieces
- 1 tbs Montana Steak Seasoning
- 3 strip bacon, diced
- 1 yellow onion, diced
- 2 tsp granulated garlic
- 3 large carrots, peeled, chopped into 2-inch pieces
- 2 lb baby Yukon potatoes with skin on (cut in half)
- 1/4 cup flour
- 4 cups beef broth
- ½ cup French Onion Soup Starter
- 1 cup strong brewed coffee
- 1 can tomato paste (6 oz)
- 1 tbsp Worcestershire sauce
- 2 bay leaves
- 1 tsp kosher salt (more to taste if needed) 1 tsp pepper (more to taste if needed) fresh parsley for garnish
Instructions
- Preheat the oven to 350 degrees F.
- Heat the olive oil in a large pot over medium high heat.
- Add beef cubes, season the beef generously with Montana Steak Seasoning. Cook for 3-4 minutes per side or until browned. Remove all the browned meat from the pot.
- Add the onions and bacon to the pot and cook for 5-6 minutes or until tender. Deglaze with coffee.
- Return the meat to the pot. Add the flour and stir to coat the meat and onions.
- Add the , beef broth, French Onion Soup, tomato paste, potatoes, seasoning and carrots to the pot. Season with salt and pepper to taste. Stir to combine and bring the pot to a simmer.
- Cover the pot. Place it in the oven and bake for 3 hours or until meat and vegetables are tender. Discard the bay leaves. Garnish with fresh parsley, and serve with crusty artisan bread or over mashed potatoes.
