In Morocco, one of the most popular dishes is Moroccan fish. As the base for our fish tagine simmering sauce we use the delicious chermoula, Morocco’s all-purpose marinade, made with aromatic herbs (cilantro, parsley) and spices (paprika, cumin, turmeric). Lemon and ginger are added for brightness and complexity, cayenne provides a bit of heat, and tomato intensifies the richness of the sauce.
Fish tagine is traditionally prepared with carrots, potatoes, bell peppers, and olives. Any firm fish, such as salmon, red snapper, or cod, is ideal. Serve with couscous, rice, or crusty bread to scoop up every bite of the wonderful sauce.
